I usually like 7 spoke wheels. These are OK. What do they weigh?

With a 7.5 width, I'd go for the 35mm. It will definitely be better for looks and performance.
With a 7.5 width, you're pretty much stuck with 225/40/18. The rim isn't wide enough for a 245, and a 235 is going to be pretty tall. That's why an 8" rim is much better.

No, you'll be fine with a +42 offset and 8" width. I am at +48 and 8.5" width with 245s and it does not rub at all.
And I'm way lower than the TRD drop.
